Sourdough Chocolate Oatmeal Muffins

Chocoalte Chip Muffins are the best, but oatmeal muffins are healthy. Heres a middle ground between healthy and tasty.

Equipment

  • Muffin Tin

Ingredients
  

  • 1 cup oatmeal
  • 1 Cup Milk
  • 1/2 Cup Sourdough Starter
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup Sugar
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour Use AP if you don't have whole wheat
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp Vanilla Extract
  • 1/2 tsp salt
  • 1 cup Chocolate Chips

Instructions
 

  • Preheat oven to 400 degrees and spray muffin tin with cooking spray
  • Dump everything in the bowl in the order listed except for chocolate chips. Mix everything together before mixing in the chocolate chips
  • Divide into 12 cupcake tins using a medium scoop.
  • Bake for 20-25 minutes

Notes

If you don't have whole wheat flour, just use all purpose flour. Its fine.
Also, don't skimp on the chocolate chips. We all have trust issues from picking up a chocolate chip cookie only to discover its oatmeal. Reward yourself, use the chocolate chips.
