Chocolate Chip Banana Muffins

These muffins are flavorful and use super ripe bananas. You only need one bowl to mix it together!

Ingredients
  

  • 3 Mashed Bananas
  • 3/4 cup dark brown sugar
  • 1/3 cup butter melted
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cardamon
  • 1 egg
  • 2 teaspoon vanilla
  • 1 Cup Chocolate Chips Mini Chips preferred
  • 1 cup walnuts Chopped, Optional

Instructions
 

  • Set Oven to 375 and line or spray 12 cupcake tins with liners
  • Mash bananas
  • Add brown sugar and melted butter to bananas and mix together well.
  • Add flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cardamom and mix together.
  • Mix in 1 egg and vanilla extract.
  • Fold in chocolate chips and, if using, chopped walnuts
  • Bake for 17 to 20 minutes until a toothpick comes out clean. Remove from tin to cool on wire rack.

Notes

Note- I portioned out 6 muffins before adding 1/2 cup of chopped walnuts to the rest of the batter.
