Sourdough Banana Bread
Day 45 (ish) of Quarantine, my bananas have started a fight club. This happens because of a miscommunication that ended with me having a lot more bananas then we actually needed.
Being that my sourdough starter is bubbling away, I figured that banana bread was in my figure, and I could use up some of the fight club losers.

Somewhere along the line, I stumbled upon a blog that told me to microwave the banana before smashing them to help release the flavors. This softens the banana a little more and releases moisture.
Sometimes its just fun and impressive to use a brulee torch. If you do not have this, you can achieve the same effect by putting the banana bread under the broiler watching it like a hawk, it is easy to burn.
Browning- Keep an eye on this loaf. Because of the brown sugar, it browns faster then other banana bread recipes I’ve made in the past. If it is getting too brown too quick, tent the loaf with tin foil to help stop the browning.
Sourdough Banana Bread
- 2 medium overripe bananas
- 1 cup brown sugar
- 2 teaspoon vanilla extract
- 2 eggs
- 1/2 cup sourdough starter
- 2 cups all-purpose flour
- 1 1/2 teaspoon baking soda
- 1 teaspoon nutmeg
- 2 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup oil
- 1/4 cup heavy cream (use milk if you don’t have heavy cream)
- 1 ripe banana for garnish (optional)
- Course sugar for garnish (optional)
- 1 cup chopped walnuts (optional)
The Process
- Preheat oven to 350 and butter loaf pans
- Peel and microwave ripe bananas for 2 intervals of 30 seconds, lightly smashing between.
- Sift together dry ingredients- Flour, salt, nutmeg, cinnamon, and baking soda. In a measuring cup, combine heavy cream, starter and oil.
- Cream together bananas, sugar, and vanilla to the bowl of a mixer add one egg at a time until all are incorporated
- Alternating between dry and wet ingredients add everything to the mixing bowl, mix to combine.
- Pour into loaf pan.
- Slice the garnish banana in have longways and place on top of the banana bread batter.
- Bake for 55-60 minutes until a toothpick comes out clean.
- Using course sugar, cover the top of the garnish bananas and Brulee with Brulee torch or under the broiler.
