Oatmeal Chocolate Chip Cookies

About 4 years ago, I made a batch of Oatmeal Raisin Cookies by request of a friend and the cookies were oddly delightful. Everything about those cookies was memorable. That gaming group devoured the cookies. That recipe has been sadly lost to the depths of the internet and I am left to figuring out what it was.

That friend recently broke their ankle and needs some cheering up. So I am sending a care package of Oatmeal Chocolate Chip Cookies. Why are they chocolate chip instead of the raisin cookies she loved? Well, I don’t have raisins and I’m not going to the store to get them, and who doesn’t love the additional chocolate chip?

Recipe Notes:

Flat Cookies- Cookies sometimes get super flat. To fix this, add a little bit more flour. If you’re worried that you’re cookies might come out flat, cook a few and make any needed adjustments.

Cookie Scoops- These cookie scoop allow for quick and easy scooping of cookie dough. Additionally, it allows you to make the most out of your dough. I was able to make 48 cookies in this recipe with the small scoop.


Oatmeal Chocolate Chip Cookies

Equipment

  • 2 Tablespoon cookie scoop

Ingredients
  

  • 1 cup 2 sticks unsalted butter
  • 2/3 cup brown sugar- firmly packed
  • 2/3 cup granulated sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2.5 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 cups oats
  • 1 bag of chocolate chips.

Instructions
 

  • Preheat oven to 350 degrees and line cookie sheets with parchment or silicone mats or use non-stick cooking trays.
  • Cream together butter and sugar until light.
  • Mix in eggs and vanilla
  • Mix flour, baking soda, baking powder, and salt together. then slowly add to the butter mixture.
  • Slowly mix in oats 1 cup at a time.
  • Mix in chocolate chips into the cookie batter.
  • Scoop cookies out onto lined trays.
  • Bake for 8-11 minutes or freeze for later.
